Tomato Basil Pasta Recipe

pasta

This is another weekend recipe to surprise your little ones. Its extremely simple and your kids will love it.

The Tomato Basil Pasta for Italians is like the humble dal and roti of India. Fusilli is my favorite pasta, you can use any shape. But please dont replace basil with tulsi and chilli flakes with chilli powder. Both are easily available nowadays. If you dont have chilli flakes you can used crushed pepper or pepper powder.

Ingredients:

  • Cooked Pasta – 2 cups
  • Tomatoes- 4
  • Oil/ Butter – 1 TBsp
  • Garlic – 4 cloves – minced or crushed
  • Onion- 1 chopped into big chunks
  • Basil – 1 cup chopped leaves
  • Chilli flakes – 1tsp
  • Grated Cheese- 1 cube grated
  • Salt

Procedure:

Cook pasta with water and a pinch of salt. You will know when its cooked when it begins to float. In another vessel cook tomatoes with water, remove skin and blend. Or else use 1 1/2 cup of tomato puree.

In a pan add oil or butter, to this add 1 onion chopped into big pieces. Fry for a min and then add your minced garlic and fry. Continue reading

Now add tomato puree, salt, basil (3/4th) and chilli flakes and cook for 2 mins. Now add your pasta followed by 1/2 the cheese.

Finally turn off the flame add the remaining basil and stir and garnish with grated cheese.

You can modify the recipe with more cheese and butter for kids, I have skipped the cheese garnish as the pasta was made for me :)

Chole Recipe – Kids Lunchbox

chole new

For me weekends is all about comfort food, I like to make something simple and quick so that I can relax. Chole is my favorite one pot meal. I follow this simple method where I prepare it in a pressure cooker. Its a great recipe for your busy mornings and for your kids lunch box. If your lazy to make rotis, bread or bun is also great to accompany with it.

Ingredients:

  • Channa soaked overnight – 1or 1 1/2 cups
  • Onion – 2
  • Tomatoes- 3
  • Ginger Garlic paste – 1 tsp
  • Green Chilli – 1
  • Chole masala- 1tsp (I use Everest)
  • Chilli Powder – 1tsp
  • Coriander Powder- 1tsp
  • Chopped coriander
  • Oil
  • Salt
  • Sugar (optional)

Procedure:

In a pressure cooker add oil, when the oil heats up add onions and fry till golden brown. The color of the onions will contribute to the overall color of the chole. Now add ginger garlic paste and roast for 1 min, Then add your chopped tomatoes and fry. Continue reading

To this add all your masala powders, salt and a pinch of sugar and fry till you see oil on the sides.
Now add chana and the whole green chilli (do not chop) and coriander. Mix well and add twice the quantity of water based on your channa and close the lid. Pressure cook for 3 whistles.

Once the pressure goes down open the cooker and again cook this chole till you get your required consistency.

Chole tastes best after a few hours when all the masala is absorbed.

Baby Food Rasam Rice + Tomato Rasam recipe

rasam

Rasam and rice is made daily in Tamil homes, it is eaten at the end since it aids digestion. In my home when we start babies with rice, we usually feed them rice with ghee and dal, and add rasam to it for taste. You can also feed plain rice and rasam. There are may kinds of rasams like dal rasam, lemon rasam, pepper rasam etc. Today ill give you the recipe for the most simple 5 min tomato rasam. Kids love it for a tangy taste and since rasam powder has pepper in it, its a must in my house when we have a cold.

For adults you can have it plain or with rice, only use the liquid on top, the residue at the bottom has to be discarded after you finish up the top liquid. For kids you can pass this through a strainer.

Ingredients:

  • Tomato – 1 large
  • Mustard – 1 pinch
  • Methi seeds – 1 pinch
  • Curry leaves – 4-5
  • Garlic clove – 1-2
  • Rasam powder – 1 tsp (I use MTR rasam powder) , for babies 1/2 will do
  • Tamarind paste – 1/2 tsp or is your using whole tamrind use half an inch and dilute in water
  • Salt
  • Oil for seasoning

Procedure:

In a pan add oil, once heated add mustard, methi seeds, curry leaves and crushed garlic cloves (whole with skin). Immediately add tomato pieces and fry. To this add salt, rasam powder and pour 1 cup of water and boil. Continue reading

Finally add tamrind paste or liquid and heat for 1-2 mins and turn off the flame. You can dilute this as much as you want.

In Karnataka a small piece of jaggery is added for a slightly sweet taste, this is awesome too.

What not to Say to Miscarriage Survivors and Childless Friends

Recently I was with someone who does not have children and after many years of trying for a baby, she has accepted this fact. But sadly our society never lets people be, the first question they ask married couples is when are you going to have a baby, second why don’t you have a baby. I have been through this after a miscarriage, people asking me why this happened, will I ever have a baby. Its was so frustrating, you just want to sit inside a shell.

Sadly we are brought up in a way where we cannot argue with older people, but atleast we as mommies we should be more sensitive to someone who has had a loss or who does not have children. Have you ever faced such a situation, where you just wanted to say “SHUT UP”? Do share your views.

Dont Say to People who have suffered a miscarriage:

You will always have another baby – Every pregnancy is precious and they value each baby.

I understand – No you dont, only say this if you have been through the same

Be happy it happened early – hello??

This is just a fetus not a baby – It maybe a dot or the size of a peanut for a mother its her baby as precious as your live baby

It happens for the good, Imagine complications later on

It wont happen again

Just forget about it

The time has not come

Atleast you didnt see the baby

Be happy with the baby you have

Give examples of other people who have faced the same situation.

I know now you must be wondering what should I say? Just listen. Some things you want to say might be true, but let the person realize themselves. Take them out for a movie or lunch, just lend your shoulder. If they reach out to you then you can surely help them with doctors, success stories etc.

Few things you should never tell childless Friends:

Telling them how great you life is with children.

Asking them when are they trying for a baby

Asking them whats going wrong.

Whats wrong with you?

Its getting too late.

Suggest IVFs n other stuff like you are a doctor. Continue reading

Aren’t you worried about the future

Who will take care of you in your old age.

Who is going to inherit your property.

Your missing something in life.

There is definitely something wrong

Why dont you adopt

Your so lucky you dont have kids

Dont give up keep trying

You just dont need to say anything. Just let them be. People have a right to choose what they want, and there are many out there who miss having children, but just put up a big smile. You never know what they are going through ,so lets be polite.

Interview with Mompreneur Gunpreet Chopra: Owner of GP’s Kitchen

Delhi people, we have an awesome mom who supplies yummy home cooked food and also runs cookery classes. Here are some words from Gunn, owner of GP’s kitchen.

gunn

Can you tell us about your business? What is it about?

GP’s Kitchen is all about food, food and JUST food. We offer people the option of take -away food for their lunch or dinner. We deliver food for parties and gatherings of various sizes (From 2 to 70 people).
Apart from catering, GP’s offers cooking classes in various cuisines to everyone who has the love for food and willing to learn something new. The cuisines we offer are Thai, Indian, Oriental, Chinese, Italian, Mediterranean, French, Desserts and much more. We teach a variety of healthy salads, soups, dips, marination, snacks, main course dishes and desserts.

Through our cooking classes we make the recipes and food very simple which would otherwise seem quite complicated. We also give away very handy tips for day to day cooking especially for working people and all the fresher cooks out there. Simple but great tasting healthy 10 minute recipes.

Were there any obstacles that you faced when you decided to pursue becoming a mompreneur?

Of course, there were many. First and foremost being the question that would this work for me? Working from home is very challenging as there are constant distractions. Clients want the best tasting and quality of food for the price they are paying and to keep up that quality is always a challenge.

My biggest obstacle was balancing my children with my work which was an extremely major issue as there was no way that I wanted that my kids should get neglected and I simply don’t believe in the nanny system. Luckily, I always got a lot of support from my family for my work and they are there to support me and take care of the children whenever the need arises which is a real blessing.

Another issue or obstacle that I face is the when people back out at the last minute from classes. Since they aren’t paying in advance, it isn’t an issue for them but I have already done the pre-prep for the classes and it becomes a real loss for me, both in terms of time and material.

What are three traits that you think a mompreneur should have when starting their own business?

1. Patience
2. Strategy
3. Positivity

Any unforgettable lesson that you learned as a Mompreneur?

There are moments when self doubt does come in and one tends to feel a little dissatisfied when things are not moving in the direction you hoped. But the most important thing is to power through during these moments of weakness and stay positive and realize that if you continue to do good quality work, the results that you were hoping for will definitely come.

What inspired you to start your business?

My Family, especially my children.

What will readers find when they go there?

Excellent quality food when it comes to the catering part. And great innovative methods of cooking different cuisines when it comes to the cooking classes.

What’s your most popular feature?

My most popular dishes are my Thai Food, my Indian cuisines, my Dips and sauces and my Dessert options.

What do you love best about your job?

Food is a vast subject. I myself love to learn new dishes and continue enhancing my skills. I love when people order something new and different from me and love to challenge myself into trying to make it perfect. I love having food discussions with other people as it makes me more aware about what new is happening and how people’s palate’s are changing. The same dish has atleast 5-7 different methods of preparation and then cooking, it’s such innovative work and I simply Love it. Most of all, I love when people are satisfied with the food I’ve cooked for them and when my student’s are happy with what they’ve learnt from me and want to come back to learn more. Continue reading

Is entrepreneurship for everyone?

Definitely!!!!! Have faith and be patient. But most importantly, to become an entrepreneur, try to do something that you love.

What are the biggest challenges you face as a mompreneur?

To make sure that I’m able to spread enough awareness about my business so that it is a profitable venture.

As a mompreneur, how does being a mom influence your work?

Being a mom has helped me in strategizing my work and being patient. Two virtues that one has or automatically develops being a mom.

Thanks Gunn for inspiring all of us. Way to go!!!

Ghee Biscuit Recipe

biscuit

Hi Mommies,
Are you worried about your LO’s weight gain? Dont worry we are all sailing on the same boat.
Since my little one nibbles on snacks these days, I thought Ill prepare some biscuits at home which would just melt in the mouth. This is extremely tasty and easy to make.

Ingredients:

  • Ghee- 1/2 cup
  • Maida/ Wheat – 1 cup
  • Water- very little
  • Salt
  • Chilli powder- a pinch
  • You can add one or more of all this: Hing/Cumin Seeds/Ajwain/Sesame seeds (I skipped this as my LO is too small)

Procedure:

Mix flour and ghee till you get a stiff dough. If its too much of a crumble, add more ghee. At the end just add very little water (2 tbsp) and mix to bring out the gluten and bind. Close in an airtight box or wet cloth and keep aside for an hour. Continue reading

Now roll the dough into a thin sheet (it should be translucent) and cut using a cutter or bottle cap. Finally prick both sides with a fork and deep fry on low flame till it turns light brown.

You can store this in an airtight box for upto 2 weeks.

Personalized Story book from www.iandmystory.com

cover

Mommies, I think your quest for the best birthday present for your little ones will end after reading this post. We all know how we can personalize mugs, calendars, cards and so much more. But imagine a personal story book with your LO as the main hero of the story. No more Tom Sawyer and Tintin!!

Recently we received 2 story books from iandmystory.com and I was more surprised than my daughter. She does not know how to read, so I read out to her everyday. The stories have her as the main character, and also includes her cousins as the other characters.

middle

There is a beautiful image of her on the first page with a wish. The books are hardbound and have great quality. It will last for a long time; the paper quality is another thing that impressed me with a nice sheen to it.

front

The last page has educational material, for example the story on Pinocchio has a page on puppets and the wondering carpet has details of the wonders of the world.

last

Best part is that I was also a part of one story (yeah!). I had requested hem to include a mommy character in the book.

Maanvi with Mommy

Maanvi with Mommy

One of the best surprises you can give your little ones. After reading out to Maanvi for sometime, I will safely store these books and surprise her when she grows older.

The price is very reasonable for the quality: Rs 400-500 (if you like your kids image to be published). These are level one story books. The same books are also available in level two (same story with more text) for kids with reading ability.

Thankyou! www.iandmystory.com, this truly made my day. Mommies this one is for keeps!! Enjoy!!

All about Pulse Polio

Hello Mommies,
Recently I commited a big mistake and I wanted to share it wih all of you so that you never repeat the same mistake. I always assumed that my LO was getting her dose of polio vaccines as the doctors gave us a chart and the vaccines have been ticked. I never thought I should go through the pulse polio routine (the one the government provides). But recently I got to know that the vaccine is also essential along with the one we get at the doctors office, as its a community initiative to fight the virus together. So never ever make the mistake and get your LO’s immunised during ever drive. The next one is on February 23rd 2014.

What is pulse polio: from the wiki

Pulse Polio is an immunisation campaign established by the government of India in 1995-96 to eradicate poliomyelitis (polio) in India by vaccinating all children under the age of five years against polio virus. This project deals with the ways to fight poliomyelitis through a large scale immunization programme, co-operating with various international institutions, state governments and Non Governmental Organizations.

How does this effect the community

Pulse Polio Immunization (PPI) involves providing additional OPV doses to every child aged <5 years at intervals of 4-6 weeks. The aim of PPI is to “flood” the community with OPV within a very short period of time, thereby interrupting transmission of virus throughout the community.

Indian Academy of Pediatrics Committee on Immunization (IAPCOI) recommendation for polio vaccine:

Child who has not received any polio vaccination so far: OPV at birth, IPV at 6, 10 and 14 weeks, OPV at 6 months and 9 months, IPV at 15-18 mths and OPV at 5 years. OPV on all pulse polio immunization days.

Child who has completed primary series of OPV: IPV may be offered as catch up vaccination for children less than 5 years of age who have completed primary immunization with OPV. IPV can be given two doses at 2 month interval. OPV need not be given with these IPV doses.

Organic Toys : Channapatna Toy Collection

As you all know, Im a big fan of organic products for children. Being from Karnataka I have played with wooden toys made at Channapatna from when I was a little kid. We would pick them up from roadside vendors while traveling from Bangalore to Mysore as the town is on the way to Mysore.

They are made of wood and they only use vegetable dyes to paint these toys. The History dates back to Tipu Sultan times. The best part is that you have so many varieties. You can find toys for babies, kids and even chessboards and dice games for adults. Babies love to bite on them so it can be used as a teether.

Sadly these artisans dont know how to market there produce. You get heaps of toys for few hundreds. Toys are all below Rs 100. They are available at Bangalore too (MG road). I have seen few online stores selling them for exorbitant prices. Do buy these toys when you visit Bangalore or if you find them at exhibitions, and prevent this art from dying. Wood can be easily recycled. Below are some cute toys from my daughter’s collection, hope you like them.
