There are a lot of working moms out here who have no time to cook nutritious meals for their kids. So I always suggest one pot meals like rice with veggies or pasta. But rice as we know is not our first choice for weightloss, so today ill give you two recipes, one for breakfast and another for lunch which can be eaten alone and is perfect for your kids too as its nutritious.

So let me start with this oats omelet. Oats as we know is high in fiber and low in carbs, it is great for pregnant and lactating mothers too. Use my recipe as a base and add as many or as little veggies to the omelet.

Ingredients:

  • Oats – 1 cup
  • Grated Veggies – 1 cup (I used carrot, capsicum, bottle-gourd)
  • Chopped onion- 1/2
  • Chopped green chillies- 1-2 (replace with chilli powder or flakes for kids)
  • Besan or gram flour- 2 TBsp
  • Salt
  • Cumin Powder (optional)

Procedure:

Soak oats in water while grating all your veggies, remove water and mix all your veggies. You should get a thick batter similar to an omelet batter. Now pour one spoon at a time in a pan. You dont need to add oil if your using a non stick pan.

Flip sides and cook till the other side is cooked. Your delicious veg omelet is ready. You can eat it as it is or with tomato ketchup.

Tip: Do not make a runny batter and start with small sizes.
