This is another weekend recipe to surprise your little ones. Its extremely simple and your kids will love it.
The Tomato Basil Pasta for Italians is like the humble dal and roti of India. Fusilli is my favorite pasta, you can use any shape. But please dont replace basil with tulsi and chilli flakes with chilli powder. Both are easily available nowadays. If you dont have chilli flakes you can used crushed pepper or pepper powder.
Ingredients:
- Cooked Pasta – 2 cups
- Tomatoes- 4
- Oil/ Butter – 1 TBsp
- Garlic – 4 cloves – minced or crushed
- Onion- 1 chopped into big chunks
- Basil – 1 cup chopped leaves
- Chilli flakes – 1tsp
- Grated Cheese- 1 cube grated
- Salt
Procedure:
Cook pasta with water and a pinch of salt. You will know when its cooked when it begins to float. In another vessel cook tomatoes with water, remove skin and blend. Or else use 1 1/2 cup of tomato puree.
In a pan add oil or butter, to this add 1 onion chopped into big pieces. Fry for a min and then add your minced garlic and fry.
Now add tomato puree, salt, basil (3/4th) and chilli flakes and cook for 2 mins. Now add your pasta followed by 1/2 the cheese.
Finally turn off the flame add the remaining basil and stir and garnish with grated cheese.
You can modify the recipe with more cheese and butter for kids, I have skipped the cheese garnish as the pasta was made for me
