This is in continuation of my previous recipe which is a stand alone breakfast. Now this is my standalone roti or paratha for lunch and is not a stuffed paratha. Its very easy to make and one of the softest rotis that you would have eaten. Working moms can store the dough it in the fridge. I call these recipes standalone as they can be eaten alone without any accompaniments.
Methi is high in iron and folic acid. Kids will love these rotis and its an easy way to make them eat green leafy veggies.
Ingredients:
- Methi – one bunch finely chopped
- Potato- 1 large/ 2 small
- Salt
- Cumin powder
- Chilli Powder
- Wheat flour/Atta – 1 1/2 cups
- Water
- Oil for frying
Procedure:
Boil potatoes in a cooker or microwave, mash it, and keep aside. In a pan add some oil and fry methi leaves till they are soft and leaves out all its water, to the methi leaves add chilli powder, cumin powder and turn off the flame.
Its ok if there is some water around the methi leaves. To this add mashed potatoes, atta and salt and mix well. Now add little water and mix till you get a soft dough. If it gets sticky add more atta.
Now roll small rotis and fry in a pan. Add a lot of powdered atta while rolling so that the rotis dont break.
Tip: You can add oil, methi leaves, cumin powder and chilli powder and put it in the microwave for 2 mins instead of frying in the pan.
