Krishna Janmastami Special – Rice Kheer

Here is a special Kheer that is prepared during Janmastami. I chose this recipe to share with all of you as its perfectly suitable for babies and kids too. Just avoid the nuts while serving babies.

Ingredients:

  • Rice – 1 cup
  • Milk- half liter
  • Khoya/mawa- 250 grams
  • Sugar – 1 cup
  • Saffron- few strands
  • Elaichi powder
  • Chopped nuts- as much as you require, I used cashews and pistachios
  • 2 tsp ghee

Procedure:

Soak saffron in 2 tsp milk and keep aside

Powder the rice is a blender just for 2 secs so that you find tiny bits of rice, now soak this powder in water

Mix half liter milk with water and let it boil.

Drain rice and add it to the milk.

Once the rice is cooked, add sugar and let it cook. Make sure the flame is very low.

Add 2 tsp ghee at this stage, once sugar melts add mawa and keep stirring. You can keep adding water if its getting too thick. The more the kheer cooks on a very low flame the more it will caramelize and taste yummy.

Finally when you see a light brown color, add elaichi, saffron and nuts and mix.

Finally garnish with nuts and saffron and serve.
