This recipe is in continuation of my previous recipe (Mint Syrup for cold and flu). This soup is an instant energy booster for kids who are unwell, its the vegetarian replacement for the famous chicken soup. Its light and refreshing and the ingredients help in boosting the body’s immune system and fighting cold and flu.

I also remember my mom always preparing this soup when we used to visit someone in hospital. She used to make a flask full of this soup. Its healthy and easy to consume especially when your unwell.

Ingredients:

  • Vegetables (carrot, peas, beans, turnip, cauliflower, you can add as many as you want)
  • Ghee- 1tsp
  • Cumin Seeds- 1tsp
  • Coriander seeds- 1tsp
  • Peppercorns- 1tsp
  • Ginger- 1 inch piece crushed
  • Garlic- 2-3 cloves crushed
  • Salt
  • Tomato – 1 small
  • Toor dal (1/4 cup) optional
  • Water

Procedure

In a pressure cooker add ghee, to that add cumin, coriander and peppercorns at once. To this add crushed ginger and garlic. And add veggies (no need to fry for long).

Now add mint, coriander and dal wit some water and salt and close the cooker lid. Cook for 2-3 whistles.

Once you open the cooker, drain the liquid and serve.

You can add some fried noodles for garnish.
