Cranberry and Pecan Orange Cake Recipe

Hi Moms, this is yet another interesting recipe which has a good mixture of fruit and nut. The orange juice used in the recipe gives it a unique and refreshing flavor. You can replace cranberry with some other berry and pecan nuts with walnut. The recipe is inspired by the Cranberry/Pecan Cake make @ www.joybaker.com.

Ingredients:

  • 4 cups All purpose flour
  • 2 cups sugar
  • 3 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 1/2 cup butter
  • 2 beaten eggs
  • 1 1/2 cup fresh orange juice
  • 2 Tbsp orange zest
  • 1 Tbsp Vanilla essence
  • 2 cups chopped cranberries
  • 1 cup chopped pecan nuts

Procedure

Preheat oven to 350 degree F or 180 degree C

Mix flour, sugar, Baking powder, baking soda and salt in a bowl, add butter and rub with your hand till you find a crumble.

In a separate bowl whisk egg, orange juice and vanilla essence.

Mix the flour mixture and egg mixture. Finally add cranberry and pecan and fold.

Now grease a baking dish, pour mixture and bake for 50-60 mins.

Tip: You can make a topping with melted butter, sugar, nuts and cinnamon for added taste.
