My daughter is a fussy toddler, she just hates food and hates to be fed. If ever she decides to eat, she wants to eat by herself and its almost impossible to introduce different kinds of food. So im always finding ways to hide stuff in her finger food. So here is one simple and easy recipe which is highly nutritious.

Ingredients:

  • Sweet Corn- 1 cup
  • Flour- 2 Tbspn
  • Egg- 1
  • Salt
  • Baking powder – 1/2 tsp
  • Pepper (white tastes better)
  • Spring Onion/Coriander/Green Chilies (optional)
  • Cheese (optional)
  • Butter for frying

Procedure:

I know there are many optional ingredients. Thats because this recipe can be modified as per taste and creativity.

Cook corn with water till soft. Add all the ingredients except butter in a blender till you find a smooth batter. Now make small pancakes on a hot plate or tava. Add butter for frying. Yummy corn fritters/pancakes are ready.
